I think that in the midwest $3.00 per person would be a good quote. But it won't be 600 servings of cake because they only want cake for 50 so you have to figure 150 pastry items X 3 = 450 - plus 50 X 2 additional items or 100 extra pastries which brings you up to 550 items - then add on the 50 servings of cake to come to your 600 items number. $3.00 X 200 = $600. Are you willing to make 550 separate items plus a decorated cake for $600. When you look at it this way you're charging $1.00 per item - $3.00 per person. Your quote might be a tad low at a buck a pop.
