I don't 'expect' to get them back but most of the time the bride returns them anyway. If I do want them back, then I let the bride know, and include it on the inventory list I leave with the cake. And yes, if I expect them back, then a deposit is paid. When items need to be returned, I leave a list with the cake with the theory that the caterers (or whoever is dealing with the cake) will see it and take note not to throw out the stuff.
