I need some help pricing. I'm doing a wedding cake June 22 for only 60 people on the floating tiers stand. On the top of each tier will be strawberry in strawberry gel. Then she wants enough strawberries in the gel and whipped cream for everyone to have some on their cake if they want more. My problem is figuring what the extra should cost. They want me to price real whipped cream as well as Cool Whip. Would you say an extra $1 per person would cover it or should I go higher? I was thinking even maybe an extra $100 total as I'll have to prepare it all and if it is real whipped cream, I'd have to whip it and make sure it will hold up in heat as it's an outdoor wedding. What would you add to it to make it more stable and should it be in a bowl of ice (under the bowl of whipped cream)? Thanks.
