When they first contact me, the very first things I ask is: what is the date, and how many people are you planning on serving. Normally, I get the "my date is ....., and I want a 4 tier cake", but I'm serving 50!

This way, I feel better organized with their options at the consultation, the different pan sizes & shapes for the amount they need. I have a spreadsheet with all the different options for different serving sizes. I can also keep that in my back pocket when I first quote a 250 serving wedding cake, and if they need to come down in price, I can offer them a smaller wedding cake with the kitchen cakes (but I don't offer that first). Currently, I do have a 150 serving minimum from the main wedding cake before I offer kitchen cakes (which are not sheets, but 4" squares, and torted like the wedding cake). Yep, I'm sure this has prevented me from getting orders but I want to make a profit as well. I have more important things than a budget bride right now.
