I always ask the date first (telling them I want to check availability), and ask HOW MANY ARE THEY EXPECTING? not how many they are serving. If you ask this quickly you are more likely to get an honest answer. Then, as part of my contract, I have it clearly stated that kitchen cakes are available when the primary cake is greater than 100 servings. But... if they tell me they are expecting 75, and a 2 tier square will serve 68 (Wilton, including the top tier), I will discuss a small kitchen cake.
