Don't charge a penny less than what you would for wedding cake per serving. Like Anna said they are so time consuming. I make mine out of thin cake, freeze it, slice it and put a raspberry filling in it and then I freeze them again and take only a few out at a time and dip while they are frozen - so much easier. I dip them in melted white chocolate. I also like doing them like Kathy Scott does them. So much easier.
