Yes, you could freeze leftovers if well wrapped, I think. I'd only make 1 cake mix in a 9 x 13 (this way, it's thinner) and then slice it in half when frozen or partly frozen. If you ever get a chance to get to an ICES Day of Sharing where Kathy is demoing these, she's a real hoot plus it's a great demo! She also does them at convention sometimes. She's from South Carolina. Where are you?
