I am in the process of renting a kitchen and getting a food permit, etc, to get legal with my local health department. I have to generate a Policy and Procedures manual (nothing too fancy). I was given a caterer's manual as a model but I'd rather use something that's specific to cakes. I know I can do it but I thought some guidance wouldn't hurt.

Also, if anyone has any advice for going through this process and dealing with inspectors and health departments (even though I realize they're all different), I'd appreciate it.
