I wouldn't hesitate raising your prices to $4 per serving. I raised mine, and actually charge more for party cakes too. I think some of the food network shows have been good for us, people finally see the amount of work involved. If someone chooses the other bakery for 10 cents or 25 cents less per serving, let them. I know for myself I don't want the job because I'm the cheapest... and if someone comes back and says "I can get a cake from XXX for $100 less" (as if they think I'll negotiate) ... I say "thanks for letting me know, good luck!". Stay on top with your customer service, and people will appreciate that and do business with you. (and Denise, that other bakery has a good idea on delivery fees, they DO take a lot of time, and while we don't have much choice on delivering them, we may as well get paid a bit more for it, either in the price of the cake or the cost of delivery)
