I have a GE Profile Convection Oven, it is not commercial. I can bake on all 3 racks at the same time. I have had no problems of blowing batter. It has 2 convection fan speeds, one for roast, one for bake, that may be the difference, perhaps the bake is a slower fan. You can also bake in conventional mode, and the bottom drawer is also a second oven (conventional).
