I've been testing a few recipes out - one is a white cake recipe from the bakery I'm taking classes at. Their version was awesome - mine stunk. It didn't rise, and was really dense on the bottom half of the cake - like the batter separated or something. Anyway, when taking notes, I didn't think to ask - which mixer attachment is best for cake batters? I used the whisk - would the paddle have worked better? I have a Kitchen Aid Artisan.....Thanks!
