The cellar floor was a great suggestion. But if you don't have that, it won't keep so long. I always tried to use mine within the month. It will finally get rancid if kept at room temp too long. Who knows how long it sat in some warehouse. Or, store it in the fridge and I doubt it will ever go bad.
