I sure disagree about freezing. Makes the cake sweat. What a mess. Leaving it set overnight covered will do just as well. Then use thinner icing for crumb coat if you want. I use my same consistancy. And I crumb coat/finish ice all in one operation. If you let it crust first, not only taking longer, you'll have tiny crust lumps in the final coat.

The simple syrup thing might be good. But what you are striving for is sealing the crumbs in so they don't get into the top coat.
