Hi momma pajama,
I have been working with chocolate leather almost since I first started decorating, and I use it more than anything else except maybe buttercream.
I paint on it,airbrush it, anything you usually do with fondant and gum paste.
I have found the best thing to use are powdered colors(i.e. petal dust, luster dust) and lemon oils or extracts. I have found that the little bit of oil on the mix make the paint flow smoother, and look les streaky when dry.
