Tall grass on beach cake

: Hi-- I'm going to do a beach cake, Cape Cod beach as opposed to tropical. I want some tall beach grass on my sand dunes, but I'm at a loss. Only thing I can come up with is using royal icing and the grass tip and piping grass bunches "lying down," then standing them up when dried. But the bunches would be flat on one side. Any suggestions? TIA
