Because gingerbread houses are just really large cookies, you'd need to treat them like edible cookies and freeze the pieces flat and in freezer bags to keep them fresh and out of the way of moisture. They absorb room moisture and odors like a sponge that's why they're only made in the winter when you can touch a lightswitch and get zapped. Don't forget a little child will break off pieces and eat the house so you don't want to give mold a chance to grow. Freeze it.

for a fundraiser. I need to bake the pieces ahead. The first pieces I baked
are getting soft and moldy! so I am no further along and have to start
over! I am using Dee's GB recipe --
How do I store the pieces before and then after building in preperation for
the decoration party?
