Yes, place the cake on a turntable then use a compass with one of the ends on something that doesn't move - like a cup or bowl, and the sharp end delicately drawing your line in the icing as you turn the turntable. If you don't have a compass just cut out a piece of cardboard and stick a needle in it, turn the turntable and scribe the side of the cake. If you ever have to keep fondant ribbons straight on a fondant cake - I learned a trick from my cake buddy in PA (Judy), cut fun foam strips (from the fabric store) the length of the circumference of your cake and the height needed then secure with a pin and use it as your guide. The little lip on the foam holds the fondant in place until you can moisten the back of the strip and put into place - then remove the strip of foam when you're sure the fondant is secure.
: I am making a 4 tier swiss meringue buttercream wedding cake. It is plain, except for a row of buttercream dots around the middle of each tier. Any suggestion on how to keep the row straight and level?
