Have frozen the cake layers that I plan on putting together and crumb-icing/covering with fondant on Friday. Will it work O.K. to re-freeze these after covering with the fondant as they need to be transported a long distance and then tiered for a wedding the following weekend. Should I thaw the layers completely and then do the fondant and re-freeze? Or just partially thaw and crumb-ice/fondant. Has anyone ever done this a week ahead after thawing the layers and re-freezing the assembled cake? Anyone have any advice?
