I know we've hashed this over before, but I'd really like to find out how to keep strawberries from weeping after they are dipped. What is the key?? Saturday we did 450 dipped tuxedo berries for a wedding that night. It took my husband and me 5 hours to do them all. By that evening they were starting to weep. There has to be a way that these shops who sell them onsite and the online order places keep them without them weeping. Otherwise, how could they be shipped in the mail? Do they wax the berries maybe to prevent this or what is the answer? Anyone know? Maybe mix a bit of wax (even though I've read that it isn't all that great for consumption) with the chocolate? I know that I did not charge enough!! HELP!!
