Like Denise said, there are as many opinions on this as their are bakers.

I have delicious scratch cakes, I've had lousy....same for mix cakes.

If mixes work for you and you can provide a product that your customers love....they use whatever method you choose.

I bake from scratch....but have not always. And it does take some getting used to, but once you find the right recipes, scratch isn't so hard.

As to the argument of "authentic" consider this....why do people cover scratch cakes with commercial fondant? It's because the commercial fondant is better than they can make themselves....and in my opinion the same goes for cakes...if the mix gives you a better product that you can make from scratch....use it!

I need some advice. After seven years of decorating cakes, I've finally decided to try to sell them. I usually make from a mix. Do you recommend making from scratch cakes to be original, or do you think people care? I want to make a good impression, but also think sometimes making cakes from scratch, they don't turn out as moist as the boxed. What do you think?
