Just returned from a consultation held at a golf club. A wedding upstairs was about to begin. The chef said to me run upstairs and take a look at the beautiful cake this lady made - it's her first attempt at fondant and at wedding cakes. I did and it was truly beautiful - she hit it spot on. I spoke to the gal and gave her high praise. She said this is her first and last wedding cake because it made her so nervous she ended up crying after it was finally set up. That's exactly what I did after completing my first wedding cake. I urged her not to give up because she truly has "the gift". Went back downstairs and the chef told me that they're not cutting the 4 tier main cake at all but will be using four large sheetcakes instead. That's when I suddenly realized that the cake I just saw was a dummy. The chef and her helpers picked up the 4 sheet cakes to bring them upstairs and they buckled so badly in the center that huge cracks showed and I sucked my breath in - fearing a really bad accident. Why would anyone put a super huge sheet cake on a single sheet of cardboard like that. Almost gave me a heart attack. Anyway, thought you'd like to hear about it.
