You sure can. I do it all the time. I don't like fondant either, so I created a smoothing device and can make buttercream look exactly like fondant. The directions for making it are in the FAQ section of the board. If you go to webshots.com and search jsarnett you can see several buttercream cakes smoothed to look just like fondant.
: My daughter is getting married this summer and I am making her cake. I am new to cake decorating, having just completed the wilton classes this past summer. I love the look of the fondant cakes and decorations they are gorgeous, however, we don't care for the taste and texture of the rolled fondant. Is it possible to still use the gumpaste decorations (Lace, drapes, etc.) over a cake iced in buttercream or will they not stay in place or cause other problems?
