I'd probably invest in a 12 x 18 as you'll use it over and over! You can put the two 11 x 15's together and I'd pipe icing down the center where they join and then you probably won't be able to see any seam. As for the design, how about just balloons and confetti piped on the cake or maybe a drawing of a cow that says: Holy Cow, you're 41!
