I like to do a sheet cake and airbrush or spray it light blue on the top. Then I do a line of blue piping gel down where the ocean would be. Then the bottom part, I finely crush up some vanilla wafers and spread a thin coat of fresh buttercream on the cake and put the vanilla wafers on for the sand. I mold some white chocolate or some streaked with chocolate seashells, etc. to put on the sand and around the sides. Then I also pipe a palm tree on each side of the cake and sometimes a sailboat up in the water. Then I add a couple of hibiscus to one corner and pipe the message.
