I always use an ice cream scoop to deposit the batter. This is what we did at the bakery. I don't know the number but you need 1/4 cup scoop. The people at the supply store will be able to help you with that.
We also increased the oven temp to 375 when baking cupcakes to make them "peak". This worked well for applying icing with a pastry tip.
