: Jeff, can you use your upside down technique with a lighter whipped icing as well?  Do you ever do that tecnique with sheet cakes??  I use a merinque buttercream icing that is not as sturdy at regular buttercream.  btw..your cakes are amazing, everything is so precise...LOVE IT!!
