Sorry to be so slow to respond....I hadn't checked this section of the board in a while.

The upside down method will work IF the whipped icing firms in the refrigerator. Yes it works for sheet cakes as well. When I use it, I now use that clear vinyl that comes in rolls from Wal-Mart instead of parchment....icings seem to release better.

By the way, I found someone demonstrating my technique on YouTube.com......not once did they credit it me with the technique though....I ought to send her an email!



: Jeff, can you use your upside down technique with a lighter whipped icing as well? Do you ever do that tecnique with sheet cakes?? I use a merinque buttercream icing that is not as sturdy at regular buttercream. btw..your cakes are amazing, everything is so precise...LOVE IT!!
