I hope the mileage doesn't end up costing more than the cake. What I do: Get the exact street address from the bride. Put it into mapquest and it will tell you exactly how many miles it is to the plantation and how long it will take you to drive there from your business or home. Multiply this number times TWO (because you need to get back home again) then multiply this doubled number times however much you're going to charge her per mile. The standard allowed any business today is .485 cents per mile but that doesn't take into consideration your time away from other potential cake business so I charge $1.00 per mile. If you need to do a test run to check out the kitchen I would charge for a second trip. To save $$ you could bake the cakes in your kitchen the day before, wrap and freeze the night before. Then all you'll need to use is a simple stove & mixer for IMBC or just electricity for a mixer for standard Wilton BC. Baking on site is too risky, some ovens are touchy and sometimes the gas is turned off when you get there and you need to wait for someone to come turn it on - but don't know who to call or how fast they can get there. Also, it gets mighty hot in Georgia, so I wonder how their refrigeration is and will it be stuffed with other items (wedding flowers, salads and beverages). So much to think about.
: I need some advice: I am in Atlanta, GA and I received a call from a customer in Albany, GA. She is insisting that she would like for me to provide her wedding cakes (bride's and groom's). Here's the kicker, it's for 350 people! I'm not sure how to go about charging her, it's about a 5-5 1/2 hour roundtrip.
Has anyone had any experience in the "long distance wedding" area? What type of factors should I consider with pricing other than cake price, delivery (miles and fuel)?
The wedding is going to be on a plantation, and she has extended the invitation to use the commercial kitchen and lodging, so I will need to make at least one trip down to the location before I can determine if I will use the facility.
I basically need some advise from those who have dealt with these type of events, the wedding cake size is not the issue, the issue is the distance.
