This is just my opinion and should be taken only as such, but I think that we all need to learn when to say "No" to some of these requests by brides. It's one thing to accept a challenge, but it's quite another to try to do something that in your heart you know is likely to fail. After all, it's your reputation as a cake artist that is at stake. I've learned to recognize my limitations, and if someone asks for something that I don't feel will work or that makes me uncofortable, I no longer have a problem telling them "No". If they want to go elsewhere to find someone else who is willing to try it, then that's fine with me--I won't have the stres of dealing with the request and trying to make it work. I've seen pictures of upside down wedding cakes like you describe, but I would never attempt it, myself because like Marida said, it looks like disaster waiting to happen.
: How do you set up a cake that has the small tier at the bottom and the larger tiers on top. I have a bride that is eccentric and wants this. I have searched all over for help on this one. Anybody ever done one? Thanks!
