Been doing cakes for 35 yrs. The past 2 years, primarily only wedding cakes. I've been really busy. I have 22 weddings booked thru August. So this isn't new for me. But this whole week, I have been down on myself. It took me so long to accomplish this order for today. A 4 tier cake for 175 people. Usually I am organized & all goes along well. But this week, several things went wrong. I kept doubting I would get done. Tasks that I can do in my sleep, just seem to drag on. I feel like it takes me way too long to assemble the tiers, crumb coat, & frost. After all this time, I should be really fast. But I'm not. I also have been thinking what would happen if the cake gets dropped on the way to delivering it. I don't have a fake cake to substitute.
So, is this all normal? Am I just really, really tired? Do any of you ever have these questions? Thanks for letting me vent! Helen

I've done cakes for nearly 44 years and I still have those days and weeks, too, when I wonder why I took so much and I'm getting up about 3 days in a row at like 3 a.m. Thank goodness I'm at home though rather than having to go out to a location at that time of the morning. I don't even count what I have. I take one week at a time or else I'd go nuts worrying about what is ahead and I think that might be your case. Just take a week at a time unless you need to get something special ordered ahead of time. I don't worry about next week's cakes until usually Monday.
