I treat my contracts like tax forms - I intend to keep them 7 - 10 years before getting rid of them. In fact, they are stored with my tax forms. I have had brides come back for their 5th anniversary and want a replica cake. By keeping the info, I know what design and flavor they had.
Whenever I describe a wedding cake slice, I tell them it is roughly the size of a deck of cards. 1 inch by 2 1/2 inch by 4 inches high. My sheet cakes are only 2 1/2 inches high so when I pre-cut the sheets, they are approx. 2" x 2" x 2 1/2" pieces.
Are your cakes pre-cut? If not, running short of cake is not your responsibility - not that it should be anyway. For me, it is the customers responsibility to order an appropriate amount. I try to advise them but they have the final say. You don't know the actual number of people in attendance. I had a wedding last year that I was told 120 were attending when in reality they had 180. The caterer later told me to pat her on the back because she made a cake for 115 serve 180.
I don't know how many brides come in saying no one eats the cake. If they want to order less, that is fine with me. I also like explain the difference between buffet cake and served cake so that they order approprately.
