I do tastings from frozen cupcakes. Whenever I have extra batter I make them into cupcakes and freeze for my appointments. They taste delicious. There is absolutely nothing wrong with freezing if you start with a good cake and wrap them up good. I don't have to bake fresh for every tasting.
I provide 4 flavors of cake, so four cupcakes at each tasting. If they bring in an army that's too bad. But since I do the tasting at the second half of the appointment I can pull out an extra set of cupcakes and they will defrost before the tasting. Each cupcake will provide enough of a taste for up to 3 persons.
For the filling part I put six to eight filling flavors on a plate, a combo of creams, fruits and mousses. Just a spoonful of each in a ring around the outer edge of the plate with a big dollop of my buttercream frosting in the center.
It is so much fun this way. They get to try combos they wouldn't have thought of. I also make suggestions. My Raspberry Chambord cost $.40 extra per serving yet it's my best seller because they get to try it and love it. If they only got to choose to taste only a couple of filling then they would never ask to try it because it costs more.

: I am a home based decorator and usually when I do wedding tastings, the bride picks one flavor/filling/icing and I do a small 6" cake iced with simple borders.
Next weekend I have a tasting that will have 6 people attending and the bride/groom have chosen 2 cake flavors, 3 fillings and 2 icings to sample. I thought doing cupcakes to mix and match all the varieties would be easiest but now I'm thinking not.
How do you handle something like this? I don't keep extra cakes in the freezer for just such an occassion. Thanks for your help!
