I do taste tests using cupcakes showcasing 4 of my nine basic flavors. Plus a plate of fillings usually a spoonful of 9 flavors and a big dollop of my buttercream frosting. My cupcakes are baked and frozen. I pull out a set of 4 at least a few hours before the appointment and they are ready to go. I also pull out the plate of fillings at the start of the consult so that they are at room temp when they taste them because that's how it will be on the wedding day. Plus I use real butter in my cake recipes so it always tastes better at room temp.
: I always offer my brides three 6" test cakes of their choice so that would serve 24 at 8 servings each. Yes she has given me a "keep the date" deposit. Nope can't lie - I need to become more cleaver than the bride.
: quick question...how large are these taste cakes?? I can't imagine giving away 3 cakes to one bride, has she paid a deposit yet?? Don't know how to help you with not having cakes at the consult, I have some things you could lie about such as: mixer breakdown, etc, but then she would wonder what if that happened for her wedding cake??
