I've added a clause in my contract that states I'll be the only cake provider, and also that kitchen cakes are only available on cake orders of 100 servings or more. I've had brides ask about covering fake cakes and making sheet cakes, and once I explain the labor is the same, they usually understand, but I also find it's much harder to say this nicely by e-mail. The brides that call and ask questions are usually more understanding when they hear this (as opposed to reading it). I also explain that their guests don't want to be on the B team with a sheet cake serving, while the A team gets the 3 layer cake with fillings, etc. My kitchen cake price is just slightly less than the regular price - ( no big discounts from me ). I don't charge extra for fillings, though. Same price as a buttercream filling. And I'm currently offering fondant at the same price as buttercream ( I raised my bc price because I prefer to work with fondant).
