Cocopan vs. Satin Ice

I have a wedding cake order for April and I have never used Cocopan. Since the product states that it is made from chocolate is there anything that I would need to be concerned about (heat, humidity etc.)Which one tastes better Satin Ice or Cocopan? And which one is easier to work with? TIA.
