cheesecake wedding cake

Hi, I had a bride call me with an inquiry about a cheesecake wedding cake to feed 200 people. Can cheesecakes be made in springform pans? I've never seen a pan larger than 10" Also, can you stack them? She said another baker said they'd crack if you stacked them, but I swear I've seen picks of stacked cheesecakes! Also, my cheesecakes are really rich-wondering what I should charge for this as it wouldn't be decorated, but takes a lot longer to bake than regular cakes....thanks in advance for the help:):)
