I've done a couple of cakes where they had one tier in cheesecake and I iced it and decorated it to match the other cakes, but each was on their own stand (that's before the popularity of stacked cakes) so I've never tried stacking one. I guess I'd be a little afraid of it, but if well supported, I guess it would work. As for charging, I can't remember what I charged, but the problem is that it would be hard to slice it like a wedding cake. If I was going to do a whole wedding cake of cheesecake, I'd probably order the bottomless pans where the bottom piece is separate. Then you'd have to line it with parchment of something.
