I use the wilton plastic dowel rods, not the hidden pillars. I cut them to size on a band saw, wash them to remove the dust from the saw, then insert them. Then put a piece of parchment paper down cut to the same size as the next tier that will be placed.
The next thing to be placed is the next layer of cake which is on a foil covered board cut to the same size as the cake. I drive a center dowel thru these 2 tiers.
I assemble on site unless it's only 2 tiers. (mostly because I can't carry a 3 tiered or 4 tiered cake, and also because I worry about crazy drivers ).
Good luck! You'll do great, and remember the cake doesn't need to be so large to feed all 250, you can always do kitchen cakes.
