level cake after frosting

I just delivered a wedding cake, and once I stacked the 10" on the 14" I could tell one side of the 10" was slightly higher. Not terribly noticeable, but I did put just a small bit of a cardboard circle on one side to raise it slightly. Is there a trick or tool to make sure the cake is flat across the top once it's iced? They always look level in my kitchen. Once I start stacking them on-site they aren't always level. I've been using Sharon Zambito's icing technique. Any other ideas would be appreciated. Thanks, Amy
