Do what I and thousands of other decorators have done to make their lives easier, purchase an AGBAY cake leveler. Use it to level each cake before sandwiching together (or filling) then for one last sanity check, run the filled (but uncrumbcoate) cake through the AGBAY again to check for level. Takes seconds and it's a no-brainer. Great "peace of mind" tool that will last forever.

: I stack on site also, and once I put my dowels in, I set an empty cake pan on top ( as if it were the next tier to be placed ) and check for level.
