Laura, I feel your pain. It can be so stressful doing this (I, too, had 5 wedding cakes that weekend- one of them 9 tiers). It is exhausting, and it seems that customers all want to call on Fridays to order birthday cakes for next month, and the cooler goes out, and your employee is pepetually 30 minutes late, and the damn cake is crooked, and on and on.

I sometimes wonder if the money is really worth it. I actually had a caterer look at me on Saturday and tell me my blood pressure was up, and that stress leads to heart disease. I had never met this woman in my life! I guess I don't handle it as well as I thought.

The upside to all of this is that you make incredibly beautiful cakes, and everyone is always happy to see you (it's not like we're funeral directors or something). So there is a real sense of satisfaction through all of it.

Hang in there, girl, and enjoy convention. I wish I was able to go!
