I have had the same problem. Take some Pam on your finger and work it into the mold before pouring the chocolate in. Overturn the mold after freezing for just a while and pop the letter or number out onto a folded kitchen towel. That way your hot hands won't touch it. I also place the thin mold onto a cookie sheet inside the freezer so that it stays straight when I remove it and won't bend as I take it out of the freezer.
