Easy Microwave Fudge

This is one of the easiest fudges to make and turns out great every time. One word of caution: THE BOWL WILL BE REALLY HOT!! Be sure to use proper hand protection when handling the bowl!

You will need:

A microwave safe glass or ceramic bowl, at least 3 quart size. I use the large glass mixing bowl from my stand mixer...be sure your bowl is microwave safe!

1 ½ sticks Butter
3 cups Sugar
2/3 cup Evaporated Milk
½ to 1 cup Peanut Butter OR one 12 ounce bag Semi-Sweet Chocolate Chips*
2 cups Miniature Marshmallows

A wire whisk
A Spatula
An 8 inch square pan, lightly sprayed with Pam [to make removal easier, line the pan with
foil or parchment paper first]

To make fudge:

1. Measure out marshmallows and peanut butter or chips and set aside.

2. Place butter in bowl and microwave on high for 1 minute.

3. Add sugar and evaporated milk and whisk to combine.

4. Microwave mixture for THREE minutes on high.

5. Stir mixture with whisk.

6. Microwave for TWO minutes on high.

7. Stir mixture with whisk.

8. Microwave mixture for THREE minutes on high.

9. Microwave for TWO minutes on high.

10. Remove from microwave; add marshmallows and peanut butter or chips.

11. Mix with whisk or a hand mixer until smooth.

12. Spread into prepared pan. Cover pan with a piece of foil until fudge cools completely.

13. Remove from pan and cut into desired size squares.

Make approximately 3 pounds of fudge.

*If desired, use ½ semi-sweet and ½ milk chocolate chips, or substitute butterscotch, or other flavor.
