I think either your heat was too high or that you overcooked it. It's suppose to remain liquid and flowing in the pan then set up as it cools, not become firm in the pan before you take it off the heat. Can you add some water to it and gently cook it again? Worth trying.

: I'm not very familiar with pralines, but my guess would be that it was
too humid. :shrug: At least, that's what makes other candies grainy.
