I make caramel apples that are smallish Granny Smiths dipped first in homemade caramel, then the kind of fudge made with evaporated milk and good semisweet chocolate, then drizzled with white chocolate and dipped into mini chocolate chips. The stick is a dowel cut to a reasonable length and sharpened in a pencil sharpener. The general idea came from someone here. (You can melt caramels instead of making your own, if you prefer, although I find unwrapping all the little packages more of a PITA than making caramel. And of course home made with cream and butter tastes better.)
