I have tried to dip them both with and without the powdered sugar. When I do it with sugar, the sugar mixes in and gives it a "swirly" look. I did some more today and part of them came out ok, but some the sugar did get in with the chocolate on about half of the batch.

With no sugar on the outside, the marshmallows take the chocolate out of temper and leaves it mottled in appearance. I'm using Peter's tempered chocolate, so it is a quality coating that I'm putting on there. Any ideas on what's throwing it out of temper on the "naked" mallows?
