I always used uncoated fresh marshmallow. I see no reason to go to the bother of tempering chocolate for coating candies. I use Merckens chocolate. Theirs tastes a lot better than the brand you mentioned. The type of Merkens you have to temper tastes the very same as the coating type too. I'd use the Merckens coating and make life easier.
