Yes, I've made jams and jellies before and used pectin and sugar as a thickener but one other very important thing you need to consider regarding jellies is that the fruit is cooked down to remove some of the water. I don't know how this would work with a softdrink (which is 100% water??? Although I've seen lime jelly before. I guess you'd need to do a trial batch - don't forget, this is how people start their businesses - with trial and error and new ideas.
: I had a request from a customer to make a jelly using a particular soft drink and the only thing i can think of is taking the liquid and adding pectin to it so that it thickens like a jell? Does anyone have experience doing this?
