Something I read said that if it starts to crystalize on the edge then you need to try not to stir it in because it will cause a chain reaction and cause all of it to crystalize. You can line the pan with the butter from the recipe to help. Also you can add a little corn syrup to the recipe or use a recipe that uses a vanilla pudding base.
