I bought a product called Sunshine Icing Improver. It's made from partially hydrogenated vegetable oil and lecithin and comes in large flakes. You mix your icing as usual, but omit 1/5 of the shortening. Then you melt an amount of the icing improver equal to the 1/5 of the shortening you left out and add the melted improver to the icing while beating. I tried it for the first time this weekend for an outdoor wedding in 90-somthing degree Texas heat, and it did great. The icing was very smooth and fluffy coming out of the mixer, and it smoothed very easily and most important of all held up well in the heat. I was about ready to give up on wedding cakes until I tried this, so now I have hope again.
